DELICIOUS BUTTER CHICKEN

Here’s a delicious recipe straight from The Cleanse, to demonstrate that you can eat delicious, tasty food that is healthy and nutritious.

Butter Chicken

Ingredients:

450g boneless skinless organic chicken breast OR 200g of organic hard tofu cut into bite size chunks

½ onion, finely diced

1 tbsp. olive oil

3 cloves garlic, minced or grated

1 tbsp. freshly grated ginger or ginger paste

2 tsp. yellow curry powder

2 tsp. red Thai curry paste

2 tbsp. garam masala spice

1 tsp. turmeric

1 tsp. cayenne pepper

¼ tsp. salt

1 tin tomato paste

1 tin light coconut milk

½ cup raw cashews

 

Method:

1. In a blender add the olive oil, ginger, spices, curry paste, salt, tomato paste, coconut milk, and cashews, and blend until smooth.

2. Add the chicken and onion to the crockpot. Pour the sauce over the chicken and onion.

3. Cook on high for 4 hours or on low for 6 hours.

4. Stir once or twice during the cooking process.

5. When ready to serve taste and season with salt and pepper if desired.

6. Serve over basmati rice.
